The Prep Cook is the crucial to the back of house team and is responsible for overseeing the overall kitchen operation including the setup, breakdown, stocking and preparation of all food items. The Prep Cook is part of the back of house team and can be cross-trained as a grill cook, kitchen runner, and/or dishwasher. The back of house team is responsible for the overall kitchen operation including food prep, the setup, breakdown, and maintenance of the fresh food line. The Prep Cook assists fellow teammates to ensure overall guest satisfaction under the supervision of the management team.

Prep Cook Responsibilities

The Prep Cook is responsible for prepping the items needed each day designated on the Prep Sheet. When the Prep Cook is ready to start the shift, they will identify any items needed immediately and plan the rest of their prep accordingly.

A good rule of thumb is to prep ready-to-eat foods before potentially hazardous foods. This reduces the risk of cross contamination!

  • Products Specification
  • Shelf Life
  • Standard Genghis Grill recipe
  • Pan or Container

The Recipe Book should always be open with the item you are prepping to reference. This is a great way to ensure you are always prepping correctly even some of the most tenured prep cooks follow this procedure!
